When you’re a parent, you’re never really off the clock. Between getting your children ready for school, making them breakfast, packing lunch, and prepping for dinner – you’re already losing a good portion of your day. Not to mention, working, taking care of yourself, and maintaining your household.

If you feel there is no time to cook meals for your kids, and often find yourself swinging through a fast food drive through most days, we feel for you. We’re here to tell you that there ARE meals out there that won’t take up too much of your time, and that your kids will love!

Here are 3 easy meals for busy parents!

1. Potato Soup

Who doesn’t love a recipe that cooks itself? This soup is great for lunch, dinner, and reheats easily for a snack. Best of all, all you’re going to need is a slow cooker and a saucepan to make this recipe come to life! 

Simply add potatoes, onions, chicken broth, and salt and pepper to the slow cooker and let it sit for 4-6 hours, depending on the heat setting you use. Once your ingredients in the slow cooker are softened, pull out a saucepan and add butter, flour, heavy cream, and sour cream. Pour this thickened mixture into the slow cooker and let the slow cooker combine the two.

2. Lemon Garlic Parmesan Chicken Tenders

One thing we can’t deny is, kids love chicken. While the traditional dino-shaped chicken nuggets are popular amongst children, sometimes, the adults crave something a little more mature. These lemon garlic parmesan chicken tenders are the perfect compromise for all members of the family to enjoy! 

Simply marinade the chicken for a few hours or overnight in egg, oil, lemon juice, parsley, garlic, salt and pepper. In a different bowl, prepare the breading by combining breadcrumbs, paprika, garlic powder, garlic powder, onion powder, and parmesan cheese. Coat the chicken, place on a tray, and bake!

3. Baked Spaghetti

Baked spaghetti is an extremely versatile dish. It encompasses everything we love about traditional spaghetti mixed with delicious lasagna. This casserole is great for building out and heating up throughout the week when you need a quick meal.

First, cook the pasta and coat it with eggs and parmesan. Brown the meat and coat it with sauce. Next, you’ll want to mix a clove of garlic and some Italian seasoning with whole-milk ricotta, and use this as you layer your ingredients in the pan, alternating between spaghetti, meat sauce, ricotta, and mozzarella cheese.
