When you live in Texas, popsicles are pretty much a staple in any household. Adults and children alike have to beat the heat somehow! The problem with most popsicles is that they are packed full of refined sugar and preservatives and because they seem healthy, people tend to eat more of them.

Making your own is actually really easy and the best part about making them at home, is you have full control of what goes in them! All you need is a popsicle mold that you find at just about any grocery store, a blender and your freezer!

I love raspberries and their beautiful color and coconut milk is divine, put the two together and you’ve got yourself a delicious recipe! I can guarantee that this is a popsicle both you and your kids will love! The Greek yogurt in these definitely adds the perfect amount of creaminess.

Raspberry Coconut Popsicles

Raspberry Coconut Popsicles Savor Culinary Services

Ingredients:

1 can (13.5 oz) regular coconut milk

4 cups fresh raspberries

1/4 cup honey

1/2 cup PlainĀ Greek yogurt

2 limes, juiced and zested

1/4 cup shredded coconut

10-12 popsicle sticks

Optional: 1 1/2 tablespoon chia seeds andĀ vanilla extract

 

Directions:

1. Place all ingredients except shredded coconut into a blender and blend until smooth. Stir in coconut and chia seeds.
2. Pour mixture into popsicle molds and freeze for about 1 to 2 hours. Once mixture has partially frozen, insert popsicle sticks into popsicles, about 3/ 4 of the way in, and continue to freeze for 3 to 4 hours or until popsicles are frozen solid.
3. When ready to enjoy the popsicles, run hot water on the mold and gently remove the popsicles from their mold. Serve immediately.
