It’s hot and humid right now – in other words it is officially summer in Texas! One of the best ways to survive the heat, is to drink something refreshing and cold! Smoothies are one of my favorite drinks to sip on during the summer – whether I’m sitting on my rocking chair on the back porch or feeding the ducks by the pond.

We make a variety of smoothies here in the Savor kitchen and we recently came up with some new, fun summer flavors for our prepared meal delivery clients this week!

One of these new flavors is our dragon fruit smoothie. We love this smoothie because of its vibrant, hot pink color! This is definitely a drink your kids are going to want to sip on because it is so bright and colorful!

So what makes the dragon fruit smoothie so great? Well, the dragon fruit of course. Dragon fruit, also known as pitaya, is in the cactus family which makes sense when you see it’s prickly outside. Dragon fruit originates from South America and Asian countries.

The texture of dragon fruit is much like a kiwi. You might expect this fruit to be very sweet, but it’s actually quite mild and only a little sweet. That’s why it’s important to add some natural sweeteners to this smoothie, especially if you have a sweet tooth!

Dragon fruit has high amounts of Vitamin C which helps keep your skin healthy thanks to its collagen-boosting properties. Not only that, but it is high in antioxidants and we can always use more ways to keep free-radicals in check.

This exotic fruit also contains seeds which contain “good” cholesterol (HDL) which helps decrease “bad” cholesterol (LDL) in your body, protecting it against heart disease. We are all about eating something beneficial to your health AND tasty so this smoothie is a winner!!

You can most likely find dragon fruit in the “exotic” section of your grocery store or even at some Asian food markets.

Dragon Fruit Smoothie

Dragon Fruit Smoothie Savor Culinary Services

Ingredients:

  • 7 oz. dragon fruit puree
  • 1/2 cup coconut milk
  • 1 large avocado, pitted and cut in half
  • 2 tbsp. raw honey
  • 1 large lemon, juiced
  • 1 tsp vanilla extract
  • 2 tsp. chia seeds

Directions:

  1. Puree the dragon fruit in a food processor until it is smooth. Then, in a small blender, puree together the avocado and the dragon fruit puree with the coconut milk.

  2. Add the lemon juice, vanilla and the chia seeds and blend together just until incorporated.

  3. Taste and adjust seasonings with more honey or lemon juice to your liking.

  4. Divide the dragon fruit smoothie between 2 glasses.
