Snacking can be the biggest culprit of weight gain, because many of us do what I call “mindless munching.” If you’re watching a show or working on your computer, it’s easy to keep munching and shoveling in handful after handful. The calories really start to add up. For some of my clients, they say they crave the crunch or texture that comes along with snacking on chips, crackers and other packaged goods. I came up with a healthy clean eating snack that is packed with flavorful veggies and hummus (so it’s a winner already) that will give you that crunch and fill you up without making you feel heavy the way that empty calories would. Say hello to my zucchini hummus roll ups!

Easy Zucchini Hummus Roll Ups

Zucchini Hummus Roll Ups Savor Culinary Services Fort Worth

Ingredients:

For the Hummus:

1/2 cup sesame seeds
1/2 cup olive oil
3 cups chickpeas
2 cloves crushed garlic
1/2 Fresh Squeezed lemon
Salt to taste
1/2 cup water, add more until reaches desired consistency.
Directions:
Blend all ingredients in a high speed blender or food processor. This is a very basic hummus, if you want to try some fun and new hummus recipes, check out this past blog post.
For the Roll Ups:
Thinly sliced Zucchini
Bell Pepper, cut into thin strips
Carrot, cut into thin strips
Cucumber, cut into thin strips
Red Onion, cut into thin strips

Directions:

Using a sharp knife, cut the zucchini lengthwise into thin slices. Take the thinly sliced zucchini and lay out. Spread some hummus on each zucchini slice. Add the veggies and roll up. Viola! You can add any combination of veggies that you’d like, but this seems to be the perfect combo of sweet (from the bell peppers and red onion) and savory (carrots, cucumber)!

 

What I love about this recipe is how incredibly EASY it is and how refreshing they are! The only preparation here is the homemade hummus (you could buy store bought but I guarantee it won’t taste as fresh!) and cutting up the vegetables.

Pro-Tip: You can easily cut up these veggies for the week so that when you’re ready to make the roll-ups they will be ready to go! With kids being out of school soon, it might even be a good idea to make a bunch of these roll ups ahead of time and keep them in the fridge. They will keep for several days. I don’t know about you, but it seems like kids are hungrier in the summer! Definitely can’t go wrong keeping these on hand when you feel like munching. Your body and your taste buds will thank you!
