A delicious, healthy snack made with whole apples and creamy vanilla yogurt. Kids love it!

Yield: serves 4 


Ingredients
4 small fresh apple(s)
1 cup(s) unsweetened applesauce
1/2 tsp ground cinnamon, divided

½ tsp pure vanilla extract
1/4 cup(s) water
16 oz vanilla yogurt
¾ cup chopped walnuts (toast if desired)
½ unsweetened flaked coconut (toast if desired)

Directions
Core the apples, leaving bottoms intact so that apples can be filled. Place apples, upright, in a baking dish.

In a small bowl, combine applesauce, and 1/4 teaspoon cinnamon, vanilla and half of
the nuts; spoon evenly into apples. Pour water around apples, into bottom of baking
dish; cover and place in oven. Cook at 375 degrees covered for 35 to 40 minutes until
apples are soft but hold their shape. Remove from oven and allow to cool to desired
temperature.

Spoon 1/2 cup of yogurt over each apple; garnish with a sprinkle of remaining
cinnamon, nuts and coconut.

Non-Dairy Whipped Cream Option: Use whipped coconut cream in place of coconut yogurt. Refrigerate canned coconut (from Asian section of your grocery store) until cream rises to the top.  Scoop off cream and place in a mixing bowl. Beat as you would fresh whipping cream and add vanilla, natural sweetener, cinnamon, etc.

Note: it takes 2-3 days for cream to rise, so be sure to include that into your plan!
