Thanksgiving is one of the best days of the year for us foodies because it’s a day to indulge, try new dishes, share recipes, and spend quality time with friends and family. Even with all the excitement around the holiday, it can quickly prove to be a bit of a challenge for those of us that are Vegan or Gluten-Free – especially if you’re not the one doing the cooking.

Suddenly, there are so many things you’ve got to consider, like what oils and ingredients were added to a dish? Will there be a gluten-free option? Does your host understand the difference between being Vegan and Vegetarian? Did cross-contamination take place in the kitchen? With all of these questions, a day of gratitude and thanks can quickly become one of stress and anxiety.

That’s where our expertise comes into play. We understand how stressful the holidays can be when it comes to food, and we want to make things a little easier by sharing one of our favorite side dishes for Thanksgiving. The best part? It’s 100% Vegan, Gluten-Free, and just plain tasty!

Check out this easy recipe for Vegan and Gluten-Free Quinoa and Cranberry Stuffing:

Ingredients

4 cups cooked, white quinoa
2 Tbs lemon juice
1/2 cup chopped parsley
2 Tbs fresh minced sage
2-3 Tbs dried cumin
1 Tbs olive oil
1/2 yellow onion
4 stalks celery
4 cloves garlic
1/2 cup dried cranberries
1/2 cup toasted almonds (optional)
Salt and pepper to taste

First, cook the quinoa until it’s light and fluffy. Secondly, sauté the garlic, onion, and celery in a saucepan with olive oil until translucent. Then, transfer the cooked quinoa into a serving bowl and add the onion, celery, garlic mixture into the bowl. Next, measure out the remaining ingredients and add them to the serving bowl. Finally, toss until all of the ingredients are well mixed.
